Mainly Pinot Noir which gives structure, the blend includes Chardonnay for finesse and a touch of Pinot Meunier for roundness and fruit. A champagne which enhances canapes, starters and light meat and fish recipes.
This wine shows a beautiful deep gold colour, with slight green hues. The sparkle is lively and persistent. On the nose it is expressive and complex with initial impressions of citrus, yellow fruit (peach, apricot, mirabelle plum) together with subtle dry fruit aromas (hazelnut, almond) and spices (cinnamon, vanilla, honey). In the mouth, it is very full and well structured, and for its age, still dominated by freshness. Richness and intensity are wonderfully associated. The remarkable balance means that this champagne will keep for a exceptional length of time.
Food Pairings:It is the perfect match for seawater fish (Bass, Turbot, John Dory).
