The Sabon family has a long history in Chateauneuf du Pape. Quote from the homepage of the domain: "One of the oldest documented landholders in Chateauneuf du Pape, the Sabon family has controlled vineyards in the zone since 1540". A powerful and full bodied red wine made from 80 % Grenache, 10% Cinsault and 10% Syrah from 40-60 years old vineyards, made by the top producer Roger Sabon from Chateauneuf du Pape. After vinification the wine ages in large oak casks for about 6-8 months. After bottling the wine ages some months in bottle for extra refinement. Pairs very well, with all kinds of red meats, wild boar, roast suckling pig and strong seasoned dishes. Drink temperature is 16-17° C. Drink until 30 - 40 years after the year of production.
