Description
The Vaillons shows the classic Chablis style with dry mineral aromas. Vivid and intense, the vibrant energy is blended with ripe white fruit aromas. Excellent acidity adds the complexity and makes a wine that is known for its ageing qualities. The 30-hectare Domaine Servin, ably directed by Francois Servin and Australian-born winemaker Marc Cameron, continues to number among Chablis’s under-appreciated addresses. An emphasis on massal selections of Chardonnay, long elevage on the lees without any appreciable impact from new oak and an enviable palate of appellations are three of many reasons why these wines deserve to be taken seriously. ANTONIO GALLONI Vinous 93 points - "The 2018 Chablis Vaillons 1er Cru is dense and rich in the glass. Tropical fruit, hazelnut, mint, lemon peel and chamomile infuse the 2018 with notable character. This is one of the richer, deeper, more plush wines in the range. Time in the glass brings out slightly more exotic notes that add to the wine's considerable appeal."
