This wine is produced from 100% Sauvignon Blanc grapes, from 30 years old vines, grown in plots around the villages of Saint Gemme, Menetreol, Amigny, Chavignol and Sancerre. The vineyards consist of 40% limestone, 40% flint and 20% clay. Harvesting is done in early October and the wine is vinified in temperature-controlled vats. It can be kept for up to 5 years and is clean, dry and fruity. Best served at 10C and is the ideal accompaniment to seafood, fish in sauces, certain cheeses, in particular Crottin de Chavignol goat's cheese. Domaine Hubert Brochard Sancerre Les Collines Blanches has fresh and fragrant Sauvignon Blanc fruit with overtones of gooseberries and a bright, refreshing acidity. First class Sancerre.
