The vineyard is located in the village of Saint-Aubin, above the plot of Chevalier Montrachet Grand Cru (south of the Côte de Beaune) Soil: Limestone and a little clay. The subsoil is composed of different layers of limestone (pebbles, marly soils). Average slope. 100% Chardonnay - Guyot with different annual works of the vine (pruning, trellising on wire / knotting, stripping.
Shimmering pale yellow color with deep greenish reflections. First nose quite closed, but still showing a nice freshness and floral aromas. With a little air, we perceive elegant notes of lemon, pear, white peach, orange blossom and with a beautiful mineral presence and a slight woody touch. In the blind, it could be confused with a Chablis wine. On the palate, this Saint-Aubin is graceful with aromas of white-fleshed fruit and lemon, with mid-palate a nice creaminess (a roundness without heaviness!) And the finish is marked by a lively acidity, very refreshing, with a little fat that brings a nice complexity. Very nice to accompany the lobster.
