Description

Laurent is turning this 10 hectare domaine into a leader of the appellation. He has expanded his cellar and is now able to move his wine by gravity. These are all classicially made wines. The 'Pontaix' is from 40 year old vines and aged in demi-muid made from 95% Marsanne and 5% Roussanne. It displays clarity and elegance, with notes of honey and white flowers.

Scallops Mash

Perfect with richer scallop dishes...

If scallops are served with a rich creamy sauce or on a parsnip or potato mash, then a richer, more textured white wine would be ideal. A Viognier or white Rhône like this Crozes-Hermitage would be perfect. If grilled pancetta or chorizo is served with the scallops, a lighter red (like Gamay or Pinot Noir) would also be a good pairing if you fancy red wine.
