Description

Since starting his own winery in 2004, Rafael Palacios has fast become one of Spain’s pre-eminent producers of white wine. His 32 parcels of Godello, which are spread over 19.5 hectares in the Val do Bibei in Valdeorras, Galicia, produce some of Spain’s most interesting white wines. The vines are planted on steep hills turned into terraces buttressed by stones. Rafa’s viticulture is sensitive to the fragile nature of these old terraces, and he has adapted his approach to ensure these magnificent structures are preserved. His viticulture is low intervention, with some of the older plots (or ‘sortes’ in Galician) being farmed biodynamically. The 'Louro' is a straw colour with youthful highlights. It has intense aromas of citrus fruits, wild mountain flowers, hints of fennel and flinty nuances. On the palate, it is fruit-forward supported by a taut, saline minerality and a textural complexity.

Tostadas

Great with Tostadas...

Mexican cuisine is chock full of layers of spices and flavours, from grassy coriander, zesty lime to sweet and smoky chilli laden sauces. This delicious Godello with its fennel hints are great with tostadas loaded with shredded chicken, guacamole, tomato salsa and sour cream is a perfect match.

Crab

Also great with Jersey Crab...

This wonderfully delicious white meat is definitely best with a crisp, classic Chablis or fine white burgundy such as a young Puligny-Montrachet if you want to be able to taste the delicate meat. A simple crab salad will also be excellent with a Sancerre or Pouilly Fumé but if both white and brown crab meat are used in the dish, then consider opening a slightly fuller-bodied white. For a dish such as a crab crostini served with samphire and shaved fennel, a Spanish Godello from Galicia such as this one would be phenomenal.
