Description

Ayala's Blanc de Blancs is produced in limited quantities in exceptional years, showcasing the superb quality of Côte des Blancs Chardonnay from the finest crus. After six years of ageing, its remarkable minerality and low dosage make it an outstanding wine that pairs well with dishes such as poultry, fish, or can be enjoyed on its own for a special celebration. It displays a bright, light yellow colour with very fine, abundant bubbles. The nose is delicate yet expressive, with notes of lemon, white fruits, yellow plums, and frangipane. On the palate, it is light, voluptuous, and vibrant, with a silky texture, citrus and floral notes, and a long, mineral finish. Awarded 93 points by James Suckling, it is perfect as an apéritif or with seared scallops or turbot with seaweed beurre blanc.
