Description
Located in Nuits-Saint-Georges, the Georges and Pascale Chicotot estate covers eight hectares in Nuits-Saint-Georges, Ladoix and Aloxe-Corton. The vineyard is cultivated organically and the wines are neither fined nor filtered. They are produced in the classic style of the appellation, which is excellent after ageing.
The Georges Chicotot estate is a benchmark in the Nuits-Saint-Georges vineyard. Here, 8 hectares of vines are cultivated using organic methods. The wines are bottled without fining or filtration. This vintage comes from clay and limestone soil and the Pinot Noir it is made from, aged around 70 years, benefits from good exposure to the east. In the cellar, the noble grape variety undergoes a pre-fermentation maceration of 5 to 6 days. Fermentation is initiated by indigenous yeasts and lasts two weeks. A few punch-downs and pumping overs are applied, only if necessary. Finally, the wine is gravity-fed and aged in barrels with a proportion of new wood of around 25%. The tasting presents us with a wine of character with a ruby colour with purplish highlights. From this escape complex and rich notes of red and black fruits, liquorice, flowers, game and leather. Will accompany tasty dishes such as a roasted pattypan squash with mushrooms, a duck breast or a langres. Drink: 2018-2030.
