TRoman Brewery is proud of its latest beer: Rebelse Strop (6.9% ABV). Five years after the successful launch of Gentse Strop, we felt it was high time this blond specialty beer got a little brother. While Rebelse Strop may be just as proud and headstrong as its big brother, its unruly temperament makes it quite unique. Our brewers have chosen a different approach with the Rebelse Strop.

They've worked with an unusual, wild yeast: Brett yeast . This unique yeast ensures the beer continues to develop, even after bottling. Brett is a difficult yeast to control and, as the name Rebelse Strop suggests, doesn't follow the rules but simply does its own thing. The Rebelse Strop certainly lives up to its name!

Thanks to the Brett yeast, the beer's flavour evolves over time. A young Rebelse Strop, for example, will develop a more vibrant, complex flavor: fruity, hoppy bitter, and with a slight sourness. A Rebelse Strop aged for a few months will have a slightly softer, rounder flavour. The aroma also changes: earthy aromas initially fill the nose, then give way to a slightly fruity aroma.
