Lee Kum Kee XO Sauce is a powerful Hong Kong condiment that adds instant umami and heat to everyday dishes. The jar contains a glossy dark amber mix of dried scallop, prawn, cured ham, chilli, garlic and shallot in oil and soy. It smells of toasted seafood, caramelised shallot and warm chilli. On the palate it delivers concentrated dried seafood, salty ham, roasted garlic and a touch of sweetness, with chunky pieces that add texture. Use sparingly to lift fried rice or noodles, fold into scrambled eggs or mashed potato, glaze fish or shellfish, mix with mayonnaise for a dip or stir into stews and marinades. Refrigerate after opening. A little is enough.
