Vilmart Coeur de Cuvée 2014 is an extraordinary cuvée made from 60-year-old vines planted in Rilly-la-Montagne. The name is derived from the fact that only the heart of the cuvée is used, meaning that only the finest portion of juice is used, resulting in a very refined fruit expression. Winemaking and maturation is carried out in oak casks, and the bottled champagne is then aged on lees for almost 6 years. The result is champagne of profound depth, with great concentration and richness. It is most certainly a complex, gastronomic style of champagne.
In an effort to farm sustainably and promote biodiversity, this respected grower excludes the use of chemical fertiliser, herbicides, and insecticides in the vineyard.

The 2014 Brut Coeur de Cuvée impresses with its density and overall energy. Apricot, baked apple tart, spice, chamomile and lightly honeyed accents all meld together. The 2014 is deep and beautifully centered, with tons of poise and impeccable balance. It's a pretty big wine by Vilmart standards, and yet all the elements are so well put together. The blend is 80% Chardonnay and 20% Pinot Noir. Disgorged: March, 2021.
