Description
Now made by the 5th generation descendants of Pio Cesare, this stellar Vermouth di Torino comes from the city of Alba known as the white truffle capital of the world. A mixture of 26 aromatic plants including, first of all, absinthe (which in German translates as "vermouth"), marjoram leaves, gentian root, sweet and bitter orange peel and many others, which make up our "historic ” recipe, is left to macerate for about 40 days in an infusion of alcohol and very little Pio Cesare white wine. To the aromatic extract obtained we add the right quantity of our Chardonnay and a few drops of Moscato, a little sugar and alcohol and we refine it in small stainless steel containers for about 4 months. A small addition of burnt sugar completes the recipe, giving its amber colour, its characteristic taste and aroma. They recommend consuming this Vermouth in the old "Piedmontese way", sipping it cold with a little lemon zest.
THE WINE ADVOCATE 93 points - Drink Date: 2021 - 2035 - "A popular product in Italy and abroad, the Pio Cesare NV Vermouth di Torino opens to a dark copper or amber color. This is a fun and genuine expression, with candied almond, maple syrup, orange peel and medicinal herb. The blend of grapes at the bottom of this Vermouth is Chardonnay and Moscato, and you only just catch a fleeting glimpse of the floral aromas associated with the latter. This is a fun bottle for a creative mixologist. You might notice exotic hints of exotic spice or toasted cumin seed."
