Description
Forget flat and nondescript industrial brandies; the "Battonage" by Ximenez Spinola is the quintessence of brandy. Obtained by distilling the cosecha wine, a very sweet wine produced with pedro ximenez grapes, it is a very delicate and enveloping distillate, which takes up the softer and creamier scents of cosecha wine with an important alcoholic part that gives it more structure.
The refinement of Brandy Battonage Ximenez Spinola lasts only 8 months and takes place in the same barrels where the cosecha wine was previously fermented; the peculiarity is that in these months repeated batonnage is carried out, to put the yeasts and other substances in suspension and give more richness and complexity to the distillate. The nose is floral, with aromas of ripe plum, apple blossom and orchard fruit.
