It sits perfectly between digestivo and aperitivo; zesty, fragrant and intensely complex with a long green and herbaceous bitter finish, which invites you back for more.
Our first batch of the season celebrates one of our favourite varieties, the Verdello lemon. This variety originating from Sicily is prized amongst chefs for it's incredible zest; bright, intense and herbaceous. The lemons are naturally green when ripe which means they are higher in pinene; a natural compound responsible for the aromatics in the likes of pine, juniper, rosemary and sage. The greener the lemon, the more herbaceous notes are present, which is exactly what we want for this complex take on a classic.
We macerated the stunning zest for 3 weeks in steel, monitoring the maceration as the green chlorophyll broke down, turning from green, to yellow, to a gentle orange. Once ready we spiked this bright base with an intense sage distillate, made with sage grown across the road from the distillery, intensifying the green bitter notes. Finally we finish with minimal sugar, resulting in a slightly dryer style than you would traditionally expect. It sits perfectly between digestivo and aperitivo; zesty, fragrant and intensely complex with a long green and herbaceous bitter finish, which invites you back for more. Rustic, cloudy and unmistakably creamy, as it should be. Shake well, serve ice cold.
