Collaborating with Manteca co-founder Chris, the Vault team crafted this spirit by grilling charred artichoke trimmings to impart a smoky layer before engaging in a six-month maceration process with grain spirit. This innovative approach brought forth earthy, nutty, and smoky notes, forming a solid foundation for the amaro. To complement the artichoke, a second maceration featured botanicals such as chicory root, rhubarb, and mint, enriching the drink's profile. After resting for two months, it was sweetened with a rich muscovado syrup, resulting in a complex amaro with bittersweet and herbaceous undertones, perfect for sipping or mixing in cocktails.

Over the past year, the team at Vault collaborated closely with Manteca co-founder Chris and his team to harness the essence of this beloved ingredient. Throughout the artichoke season, the kitchen team set aside the trimmings, gently charring them on the grill to impart a layer of smoke before they journeyed to the distillery.

This innovative process evolved into a stunning six-month maceration project, during which charred artichokes were gradually added to a growing tank of grain spirit. As the batch developed, earthy, nutty, smoky, and gentle bitter flavours emerged and intensified, forming a solid base for this exceptional amaro—one of Vault's most ambitious projects yet.

To complement the lead role of the artichoke, a second maceration featured a diverse selection of botanicals, including chicory root, rhubarb, orange, dates, mint, and oregano, among others. These ingredients work harmoniously to round out and enhance the character of the drink.

Once the macerations were complete, everything was rested in tank for an additional two months to fully integrate the flavours before being sweetened with an in-house crafted molasses-rich, toffee-like muscovado syrup. The result is a deep, dark, and incredibly complex amaro that strikes a perfect balance between bittersweet, savoury, and gentle smoky notes, culminating in a lingering finish of dark chocolate and herbaceous undertones.
