A single batch, limited release.

Over the past year we’ve worked closely with Manteca co-founder Chris and team to harness the flavour of one of our most loved ingredients: the artichoke. Throughout the artichoke season, the kitchen team set aside their prep trimmings each week, gently charring them on the grill to add a layer of smoke before their journey to the distillery.

This became a stunning six month long maceration project; adding more charred artichokes each week to a growing tank of grain spirit. As the batch grew, earthy, nutty, smoky and gentle bitter flavours developed and intensified, creating the perfect base for this really special amaro - one of our most ambitious projects yet. We’ve combined this with a second maceration starring a supporting cast of chicory root, rhubarb, orange, dates, mint and oregano amongst a host of other botanicals, to round off and compliment the star of the show.

With the macerations ready, we rested everything in tank for a further two months to fully integrate before sweetening with a molasses rich, toffee-like muscovado syrup made in house. The result is deep, dark and incredibly complex. A perfect balance between bittersweet, savoury and gentle smoke, with a dark chocolate and herbaceous finish.

As with everything we make, this is an all natural product. No artificial flavourings, colourings or synthetics, just great ingredients, patience and a delicate touch.
