Roter Riesling was created on similar principles - four weeks of wild fermentation on the skins allowed for the extraction of beautiful colour and herbal aromas, and more than a year of maturation calmed the lively acidity and softened the tannins. In addition, it contains notes of grapefruit, lychee and mirabelle, and in the mouth it evokes the taste of pomelo peel and dried fruit. Roter Riesling is perfect for stuffed cabbage rolls in tomato sauce, smoked cheese and fish. It is a great thirst quencher on a hot afternoon and goes well with ceviche with crayfish and delicate fish.
