Domaine Daniel Etienne Defaix Chablis 1er Cru Vaillon 2015 is an elegant and expressive example of a warm vintage site, combining ripe fruit generosity with the clear mineral backbone typical of Vaillon. The colour is a bright straw with faint golden highlights, signalling a wine that has gained some weight while retaining clarity. The nose opens with ripe lemon, yellow apple and pear, followed by richer notes of white peach and quince. With airing the bouquet develops hints of honeyed blossom, chamomile and a light beeswax sweetness, while a persistent thread of wet stone and oyster shell affirms the Kimmeridgian limestone signature.
On the palate the wine is medium plus in body with a rounded, almost textural richness at the entry that is balanced by a firm saline acidity. Ripe orchard and citrus fruits lead the flavour profile, evolving into baked apple, lemon curd and a touch of apricot on the mid palate. There is notable depth and a gentle creaminess from lees contact that complements rather than softens the wine's stony core.
