Drink Date 2017 - 2037 - Very deep garnet-purple colored, the 2015 Cabernet Sauvignon Bin 707 is simply a chocolate box of layered delights, revealing crème de cassis and black cherry notes plus underlying roasted nuts, espresso, licorice, pepper, menthol hints and a waft of cedar chest. Full-bodied and built like a brick house, the firm, grainy structure well-supports the densely packed fruit and savory layers, finishing with epic persistence and on a spicy note. Critic tasting note: "Unfortunately, the first bottle of this was corked, which seems a shame considering the steep price, which has skyrocketed in recent years. The second bottle, however, showed off richness and complexity, with notes of raspberry, cherry, beets, coffee grounds, dark chocolate and a savory earthy Middle Eastern spice element. Chalky in texture with tight dusty tannins and drying herbal woody characters, this Cab is still in its infancy. Leave it be for a few years, however, and it should blossom beautifully."
