Toro Albalá is without a doubt the absolute top for sweet wines from the Pedro Ximénez grape. What they do is bottling the time. Every year a number of botas (barrels) from a certain year are bottled.
Toro Albalá is a unique estate. Its history goes back to 1844 when the Prieto family began making and storing wines ('cosechero' and 'criadero'), mainly Fino wines. Over the centuries, the wines have been aged in barrels in the 'naves de crianza' of the bodega, which today are among the oldest in the region, even in all of Andalusia. Thanks to his ancestors, Antonio Sánchez now has unique wines. He is obsessed with them. Not only with his historical wines, but also with the history and culture of his region. He has an archaeological archive with more than 4,000 items, found in the vineyard and collected over the years. The Pedro Ximenez grapes for this Toro Albalá Don PX 2003 are dried on mats for a few weeks after harvest and lose water and gain sugars. After pressing (same as olive oil) alcoholic fermentation starts which is stopped by adding pure wine alcohol.
The 2003 Don PX is deep brown, black in colour, with an oily consistency. The bouquet unfolds further and further and is a school of scents in itself. Scents and flavours of cocoa, dried fruits, caramel, coffee, citrus. Open, accessible and direct in taste. The strong concentration still knows how to refine itself in structure through the subtle fine structure of acids that is almost imperceptible. The complex scents find their extension in the mouth with an impressive long finish. A winter dessert wine for with solid desserts, such as chocolate, nuts, caramel and dried fruits.
The 2003 Don PX is actually infinitely durable, like Vintage Madeira. Also after opening the bottle, the wine can be stored open for over a year, preferably in a cool place, just like an opened bottle of wine can be stored best and we advise to do this simply in the refrigerator. We advise to serve the wine nice and fresh around 8°C.
