ABOUT THE WINE
Confidentially, the Chablis Cairn releases beautiful engaging floral notes, accompanied by delicate fruit. Well-balanced in terms of structure, it maintains a nice tension, minerality, and a very pleasant persistence.
Planted in 2000 by my father, Christian Michaut, this 39-acre vine located in a micro-valley of my hometown is part of the birth of Domaine 47N3E.
It is a plot rich in history, planted with rootstocks usually reserved for Grands Crus. These rootstocks adapt perfectly to the parcel's soil, rich in silt and clay, but they are demanding and sensitive to disease pressure, which requires me to work with these vines separately.
Cairn also demands special attention during harvest to ensure the grapes are picked at full ripeness. The grapes are pressed immediately, and the clear juices are vinified in stainless steel tanks. The gentle fermentations are guided by the naturally present yeasts and bacteria in the grape juice and in the cellar…
Cairn is a Chablis with a distinctive personality. After alcoholic fermentation, a 12-month aging in vats and new oak barrels from the Bertanges State Forest refines its character.
This is a special cuvée made from a 0.39-hectare plot of vines planted in 2000 in a tiny valley in Beine. Fully ripe grapes are fermented in tank and then aged in a mix of tank and new oak barrels. This is floral and delicate with a creamy texture and some vanilla oak, which will integrate with time. All is kept in check with a stinging acid spine. Drink 2025 - 2030.

The 2022 Chablis Cairn is a step up from the regular Chablis Village. It has fresh Golden Delicious and hints of yellow plum aromas; there is plenty of energy and tension here. The palate is well-balanced with impressive depth. Maybe the reduction is too strong? I would afford this a year in bottle because I can see the potential.
