ABOUT THE PRODUCER
Domaine Billard encompasses approximately 12.5 hectares of meticulously maintained vineyards across various appellations in the Côtes de Beaune, with the largest holdings located in the Hautes Côtes de Beaune. The estate also features smaller plots in renowned villages such as Saint Romain, Saint Aubin 1er Cru, Auxey-Duresses, and Beaune, each contributing to the diverse character of their wines.

Recently, the domaine transitioned from father to son, and Jérôme Billard has infused new energy and philosophy into the family estate. Committed to sustainable practices, he cultivates the vineyards with great respect for nature, adhering to the principles of organic farming. Yields are intentionally kept low through strategic cover cropping and severe pruning, ensuring optimal grape quality. All vines are harvested by hand, reflecting a dedication to craftsmanship.

Jérôme exclusively employs indigenous yeasts for fermentation, enhancing the authenticity and expression of the wines. While his father previously sold grapes to a local cooperative, Jérôme has shifted to estate bottling his entire production, showcasing the unique terroir of each vineyard.
