Description

IN BRIEF
Domaine Jacques Carillon Puligny Montrachet 2021 is a poised graceful white that marries Burgundian precision with gentle texture. Pale gold with a silvery rim, it lifts lemon blossom, pear and white peach before revealing crushed shell wet stone and lemon verbena. Air brings toasted almond and a faint pastry note from careful élevage. Medium bodied and finely balanced, taut acidity gives a clear spine while citrus pith and green apple sit at the core. A soft lees creaminess shapes the mid palate and a saline mineral thread keeps focus. The finish is persistent with citrus oil and a touch of bitter almond. Serve 10 to 12°C with scallops, grilled white fish, lobster or simply roast chicken. Drink now to 2028.

ABOUT THIS WINE
Domaine Jacques Carillon Puligny Montrachet 2021 is a poised and graceful white that marries classic Burgundian precision with subtle textural depth. Pale gold with a silvery rim, the wine shows bright clarity and a slight sheen. The nose opens with lemon blossom, pear and white peach, then develops more complex notes of crushed shell, wet stone and a faint herbal lift of lemon verbena. On gentle airing there is a suggestion of toasted almond and a delicate pastry note that speaks to careful élevage without dominating the fruit.

The palate is medium bodied and finely balanced, driven by taut acidity that provides a clear spine. Citrus pith and green apple occupy the core, while orchard fruit and a touch of quince add ripeness and weight. Mid palate texture is tactile yet refined, with a whisper of creaminess from lees integration that softens the edges and brings harmony. Mineral saline tension threads through the profile, giving focus and a lingering sense of terroir.

Tannins are almost imperceptible, the structure coming instead from acidity and mineral drive, which together deliver a persistent and elegant finish. Flavours of citrus oil, crushed stone and a subtle bitter almond note remain, inviting another sip. Despite the wine s evident poise it retains youthful vibrancy and will reward short term cellaring for added richness and more pronounced tertiary complexity.

Serve chilled but not overly cold, around 10 to 12°C. Pair with simply prepared white fish, scallops, lobster, roast chicken with lemon and herbs, or mild soft cheeses. Drink now to enjoy its fresh, mineral clarity, or cellar through to the late 2020s to watch the texture broaden and savoury notes deepen. This Puligny Montrachet shows refinement, focus and a palpable sense of place.

JANCIS ROBINSON 17 points
Creamy texture and citrus refreshment. Just the job! Not too austere; not too blowsy. Good choice on the part of our hosts at Opus One offices in Bordeaux. Went very well with sea bass, mango ceviche, avocado cream and wasabi. (JR)

ABOUT DOMAINE JACQUES CARILLON
Domaine Jacques Carillon is a respected Meursault estate rooted in family tradition and known for producing precise, terroir-driven white Burgundies. The domaine was established by Jacques Carillon and remains family run, with the current generation managing vineyards and cellar operations to maintain a consistent house style that balances freshness with textural richness.

Vineyard holdings are concentrated around Meursault and include village and premier cru parcels as well as small holdings in neighbouring communes. Soils are classic Côte de Beaune limestone and marl that favour Chardonnay’s mineral clarity and natural acidity. The team works with low yields, careful canopy management and selective hand harvesting to ensure optimal ripeness and healthy fruit. Many parcels are tended with minimal intervention to preserve soil life and express site specificity.

Winemaking at Domaine Jacques Carillon is traditionally minded and attentive. Whites are typically gently pressed, fermented in barrel or large neutral vessels and left on the fine lees to develop texture. Oak use is measured with a conservative proportion of new wood chosen to support rather than dominate the fruit. Élevage is monitored closely so that the wines gain complexity and mouthfeel while retaining primary aromatics and vibrancy.

Stylistically the domaine’s Meursaults are noted for their floral and citrus lift, orchard and stone fruit characters, a pronounced mineral thread and a rounded mid-palate that is kept lively by fresh acidity. Premier cru expressions show greater depth, a creamier texture and the ability to age gracefully for a decade or more in good vintages. Overall Domaine Jacques Carillon exemplifies a classic Burgundian approach where careful vineyard work, restrained cellar craft and family continuity produce Chardonnay of clarity, balance and longevity.
