Description
This climat of "Abbaye de Morgeot” derives its name from the 12th Century vineyar owned the Cistercian monks of the Abbaye de Maizières who planted vines here, but as they were too far from their abbey (situated in Saône-et-Loire) they built a cellar to be able to make their wine on the spot. This 1er Cru vineyard is 1.15ha in size traditionaly grown and certified organic. Harvesting and sorting by hand to keep only ripe and healthy grapes.
The alcoholic fermentation takes place in French oak barrels where the wine is aged for 11 months, through to the end of malolactic fermentations. Then it is racked into stainless steel tank to keep all its freshness. There, ageing lasts a further 5 months before the wine is bottled, following light filtration.
This wine is dotted with incomparable elegance. The finesse and complexity of its aromas enchant the palate. It is dense yet classy and well defined with ripe white fruits, peach, lemon confit, hawthorn blossom and spices in magnificent harmony. Best enjoyed after cellaring at least 3-5 years, depending on personal taste. Serving temperature: 12 to 14°C.
Perfect pairing with lobster, freshwater crayfish gratin, pan-fried spicy langoustines, turbot mousseline or poultry in cream sauce with girolle mushrooms.
