Description
'Les Combottes' is a 0.56ha parcel planted in 1998 north of the village spread over a south-facing combe running alongside the Hill of Corton.
Traditional growing methods with ploughing and using certified organic products. Harvesting and sorting by hand so as to keep only ripe and healthy grapes. Natural vinification without artificial yeasts. The alcoholic fermentation takes place in French oak barrels where the wine is aged for 11 months. Then it is racked into stainless steel tank to keep all its freshness. There, ageing lasts a further 5 months before the wine is bottled, following light filtration.
It expresses gorgeus tension with aromas of slightly spicy fresh fruit and white flowers (springtime hawthorn, acacia). With age, it develops a bouquet of honey and amber. It goes well with a hot starter, like melted goat’s cheese pastries “en aumônière” or light fish dishes, grilled or baked “en papillote”. Serving temperature: 12 to 14°C. Drink between 2 and 6 years old.
