It is named after Penang, an island off the coast of Malaysia. It’s traditionally made with beef but you can also use chicken or lamb. Try adding aubergine or tofu for a delicious vegetarian option.
To make your curry, simmer the paste with coconut milk and add your meat. Cook with a lid on until the meat is tender. Serve the curry with steamed rice or flaky rotis.
