Description
Tenuta Olim Bauda is a secluded family estate in Piemonte, a region almost as famous for its elusive truffles as its wines. Tucked away at the end of a winding drive, the winery embodies a dedication to crafting fresh, expressive wines with a delicate, low intervention approach. Run by siblings Dino, Diana, and Gianni, Olim Bauda champions purity in its creations, much like the prized truffles themselves.
Their 'I Boschi' DOC Piemonte 2023 is an elegant Chardonnay, with grapes sourced from vineyards in Fontanile and Castel Boglione. Here, the unique terroir features fossil rich Sant’Agata marls, partially merging with sandstone soils containing plenty of limestone, imparting a distinctive character to the wine. Harvested in the first week of September, only the free run juice from a gentle pressing is used. The must undergoes a cold maceration with fine lees and bâtonnage to enhance aromatic extraction, before fermenting for 15 days in 50 hectolitre wooden vats. A year of ageing in tonneaux, with 10 percent new oak, allows the wine to evolve gracefully until bottling.
This deep straw yellow Chardonnay offers a fragrant and pleasant bouquet, revealing fine hints of citrus, pineapple, and melon, elegantly softened by subtle hazelnut and buttery notes. The palate is sapid, fresh, and exceptionally elegant, boasting excellent structure and a rich, persistent finish. 'I Boschi' is a versatile and refined choice, perfect with tajarin piemontese and white truffle, raw scampi, pizza with buffalo mozzarella, or even a delicate apple glara.
