The palate is poised with fine, creamy mousse but softened by generous dosage. Along with the vivid apple fruit this coalesces into a creamy, fresh, acutely balanced style of fizz that speaks of clarity, sophistication and richness. Nyetimber created this demi-sec blanc de blancs, named after the winemaker Cherie Spriggs, to complement delicate desserts, but like many sweeter styles, it can also work well as a pairing for gently spiced Asian cuisine. It's a multi-vintage wine with 38g/L residual sugar, and it has spent five years ageing on its lees in bottle. It feels luxurious to drink, ripe and honeyed with red apple sweetness and notes of toffee. Achieves perfect harmony between richness and freshness, and would also work well as an aperitif, served with chicken liver paté on toast, or to accompany a cream tea.

The Cuvée Cherie Demi-Sec is a multi-vintage 100% Chardonnay from West Sussex and Hampshire containing 38g/L residual sugar. Readers in the US should note that this is exactly the same as the Demi-Sec, which previous bottles were labeled, without vineyard designation. It has a well-defined, brioche-tinged bouquet that demonstrates more reserve than expected, light almond scents mixing with honey and lemon thyme. The palate offers dried honey, tangerine, hints of pink grapefruit and a dab of sour lemon than neatly counterbalances the not-excessive sweetness on the finish. Fine. - By Neal Martin on June 2020
