Described by Cathy as "a reflection of a meeting between art and wine," the striking label features original artwork by Peter van Straten, created right in her Tasting Room during his exhibition.

60% Roussanne
40% Grenache Blanc

TASTING NOTES:
The focus is on the layered interplay between texture and vibrancy. Floral, herbs, dried pears and freshness from Roussanne support the textural depth of the Grenache Blanc that sweeps over the palate to the finish.

ABOUT THE NAME:
The collaboration with Cape Town artist extraordinaire Peter van Straten perfectly captures the harmony between these two very different varieties. His painting on the label is entitled “Bursting into Birds”

The symbolism of the swallows connecting man to spiritual transformation into another world is perfectly juxtaposed with the essence of this wine, where the creation is brought about by connecting human intervention in the vineyards and the spiritual alchemy of maturation and blending into a transformed wine.

RECOMMENDED FOOD PAIRING:
Our Rhone-style blend is the perfect canvas for fine dining pairing menus. The aromatic white is perfect with shellfish, fish in cream sauces, risotto, asparagus in lemon butter, goat cheese, and grilled poultry. Serve slightly chilled.

RECOMMENDED BOTTLE MATURATION:
The wine is approachable in its youth, with fresh, vibrant tension on the entry and an opulent core of rich texture, and may age well for up to 10 years due to its well-integrated acidity.
