Description

Simply an amazing white wine. Manufactured by one of the most respected winemakers in the name of Soave. Pieropan winery has a history that dates back to 1890, is not a new name in Italian oenology, nevertheless has an eye toward the future as demonstrated by the recent changes in the company with the transformation of most of the vineyards in organic farming. The family Pieropan works with focus and dedication, selecting the best grapes, creating wines that stand out for their ability to reflect on tasting the identity of the terroir of origin, which is able to better express their full potential only through the wise man's work. One of the greatest expressions of Garganega is the Soave Classico La Rocca, made from grapes of a particular and exclusive cru, behind the ancient Scaliger castle of Soave. Classic La Rocca aromas of almond essence and honey lead to an elegant and beautifully balanced palate, with notes of vanilla and almond kernel, ripe apricots and exotic fruit. The long finish has a light mineral edge.

Rabbit And Mustard

Also great with rabbit in mustard sauce...

Rabbit, Hare, Woodpigeon and Duck are examples of “medium” meats in this instance that are lighter in colour and have less of a gamey flavour compared to darker meats. The classic dish of Rabbit with wholegrain mustard sauce matches superbly with a good, buttery Chardonnay such as this delicious, creamy Soave from Pieropan. This has enough acidity to cut through the creaminess of the sauce, and enough richness to balance out the mustard, avoid anything too tropically in this instance as to avoid over-powering the dish.
