Description
Nice to be a wine ... on the single vineyard Schilling. Endless sun from above, a loam-loess mixture with slips of brown earth from below. The noble old vines in this vineyard also contribute to Georg Weinwurms best Gruner Veltliner. Highly complex, dense and full, with a touch of minerality on the palate.
TASTING NOTES: Deep and rich in scent, delicate vanilla note from the long yeast contact, quince, minerality provides structure from the beginning, colourful array of apple and stone fruit from crisply cheeky to ripe for harvest, always serious, great length.
FOOD PAIRING: Fried chicken breast with avocados and tomatoes, asparagus with prosciutto
VINIFICATION: Manual harvest at the mid of October into big boxes, gentle pneumatic pressing, 5 hours of maceration, fermentation in stainless steel tanks at a temperature of 17 - 18 °C
DRINKING AGE: 7 years.
