Bruno Paillard’s Premiere Cuvée is the flagship of this independent, family-run house. It is a blend of Pinot Noir, Chardonnay, and Meunier grapes sourced from over 30 different villages. A key part of the process is the high proportion of reserve wines-up to 50%-with some components dating back decades. This ensures the wine stays consistent and has plenty of depth.
It is made in an "Extra Brut" style, meaning it is very dry. After three years of ageing in the cellar, it develops a straw-gold colour and fine bubbles. You can expect flavours of citrus and red berries, followed by a hint of toasted bread. It is a clean, crisp Champagne with a distinct minerality that reflects the chalky soils of the region.
