The creation of this Brut Rosé involves two distinct methods: the first is the production of white wine from Pinot Noir, achieved through a quick pressing and rapid separation of the skins. This process results in a very pale juice that can be vinified as a white wine. The second method involves producing red wine from Pinot Noir by allowing a prolonged maceration of the juice on the skins, lending colour and depth to the final product. A touch of Chardonnay is added to bring vivacity and balance to the fruity elements of the Pinot Noir, creating a harmonious blend.

Disgorged in January 2022, Paillard’s NV Extra-Brut Première Cuvée Rosé exhibits aromas of peaches, wild strawberries, Griotte cherries and spices. Medium to full-bodied, bright and tensile, it’s concentrated and incisive. It concludes with a bright, long and penetrating finish.

The NV Extra Brut Rosé Première Cuvée is laced with hints of grapefruit, citrus peel, rose petal and dried flowers. Like all Paillard Champagnes, the Rosé Première Cuvée is very bright, but it also has enough mid-palate pliancy to balance things out. The creamy, resonant finish is quite attractive. Bruno Paillard's Rosé is predominantly first-press Pinot Noir, with some Pinot Noir red wine added along with an unspecified amount of Chardonnay for balance. For blending, the team utilise reserve wines stretching back to 1985, and the result is aged for 36 months on its lees then at least six months after disgorgement. This bottle, disgorged in January 2019, displays savoury red fruit flavours with a touch of apple and fresh bread. It has plenty of salinity which tightens everything up, and finishes clean and crisp with plenty of vibrant acidity. A lovely, delicate, measured pink Champagne.
