Bodegas Ximénez-Spínola has focused exclusively on the Pedro Ximénez grape since 1729. Their ‘Delicado’ is a testament to nearly 300 years of expertise in the Marco de Jerez region. To achieve such concentration, hand-harvested grapes are sun-dried for at least 21 days between the vines. This painstaking dehydration process concentrates natural sugars and tartaric acidity, resulting in an incredibly low yield - only 200 litres of must are obtained from each ton of fresh grapes.

The wine presents a mellow, deep golden colour with intense aromas of orange peel and herbs. On the palate, it is smooth and round, delivering concentrated flavours of currants, dried apricots, and hints of toasted wood. It is a luxurious choice that pairs beautifully with rich pastries or aged blue cheeses.
