Domaine Servin’s 2024 Vaillons is exactly what you want from a really good Premier Cru Chablis. It pours a classic pale gold, but what really grabs your attention is the nose - packed with fresh green apple, zesty lemon, and a touch of white blossom. Underneath it all is that unmistakable chalky, flinty character you only ever find in Chablis.

When you taste it, it’s vibrant and incredibly refreshing. The 2024 vintage has given the wine a lovely weight in the mouth, balancing bright acidity with a textured, slightly savoury edge. The fruit is crisp and generous, leading into a mouth-watering, salty finish that keeps you coming back for another sip. It’s absolutely delicious right now, though it will happily sit in the cellar for a few years if you prefer to wait.
