The Waterford Estate 'Single Vineyard' Chardonnay 2023 is a dry white wine produced in the Stellenbosch region of South Africa. As designated by its label, the grapes are sourced entirely from a single registered vineyard block on the estate. This specific site is managed to optimise the balance between canopy growth and fruit exposure, ensuring consistent ripening and flavour concentration.

During production, the grapes are whole-bunch pressed. The extracted juice undergoes fermentation in French oak barrels, utilising a combination of new and older wood to integrate oak characteristics without masking the primary fruit. Following fermentation, the wine is aged on its lees for several months with periodic stirring. This technique builds textural complexity and adds structural depth.

The 2023 vintage exhibits a pale to medium gold colour. Its aromatic profile is characterised by prominent notes of lemon zest, grapefruit, and white peach, layered with subtle secondary aromas of toasted almond, brioche, and vanilla. On the palate, the wine presents a medium-to-full-bodied structure. A rich, slightly creamy mid-palate is balanced by the varietal's natural, crisp acidity, leading to a lingering, dry finish. This Chardonnay pairs effectively with roasted poultry, grilled salmon, creamy sauces, and mature cheeses.
