Description
The Waterford Estate 'Old Vine Project' Chenin Blanc 2025 is a white wine from the Stellenbosch region of South Africa. It carries the Certified Heritage Vineyards seal from the Old Vine Project, guaranteeing that the grapes are harvested from vines planted at least 35 years ago. These older vines naturally produce lower yields, resulting in smaller berries with increased concentration of flavour and structural depth.
Following the harvest, the winemaking process focuses on preserving this concentration while adding complexity. The juice undergoes fermentation in older French oak barrels rather than stainless steel. It is subsequently aged on its lees for several months. This technique enhances the wine's mouthfeel and textural weight without imparting excessive oak flavours, allowing the primary Chenin Blanc characteristics to remain prominent.
In the glass, the 2025 vintage exhibits a medium gold colour. The nose presents a complex aromatic profile of stone fruits, including yellow peach and apricot, integrated with notes of baked apple, citrus zest, and a subtle almond undertone. The palate is characterised by a rich texture that is structurally balanced by the grape's naturally high acidity. This medium-to-full-bodied wine pairs effectively with roasted poultry, pork belly, cream-based pasta, and rich seafood.
