Description
The Waterford Estate 'The Jem' 2017 is the primary tier red wine produced in the Blaauwklippen Valley of Stellenbosch, South Africa. While led by Cabernet Sauvignon, the wine is a complex blend that integrates Bordeaux varieties, such as Petit Verdot and Cabernet Franc, with Mediterranean varietals including Shiraz, Mourvèdre, and Sangiovese. This specific composition incorporates fruit harvested from diverse soil profiles across the estate.
The 2017 vintage was shaped by dry growing conditions in the Western Cape, resulting in reduced grape yields with concentrated flavour compounds. Following fermentation, the wine undergoes an extensive maturation period in French oak barrels to facilitate the integration of its various components and to soften its robust tannin structure.
