Paco & Lola Albariño is a bright, immediate expression of Rías Baixas that captures the variety’s hallmark freshness, aromatic clarity and saline personality in a modern, approachable style. The colour is pale straw with a luminous, crystalline core. The nose is fragrant and inviting, opening with zesty lemon, lime blossom and green apple, followed by white peach and pear. Subtle floral notes of jasmine and orange blossom lift the aromatics, while a faint sea spray and crushed shell mineral note speaks to the estate’s Atlantic proximity.
On the palate the wine is light to medium in weight with racy, nervy acidity that keeps the fruit focused and vibrant. Primary flavours of grapefruit, lemon pith and green pear sit alongside a ripe stone fruit thread that adds texture and breadth. A pinch of white pepper and a delicate herbal lift bring savoury interest on the mid palate, while a crisp saline seam gives the wine drive and a mouthwatering persistence. The finish is clean and persistent, leaving citrus peel and a faint sea salted echo that make the wine exceptionally food friendly.
Winemaking is geared to preserve freshness and varietal purity, with careful temperature controlled fermentation and early bottling to capture the lively aromatics. The style is unoaked and direct, emphasising bright fruit and mineral clarity rather than textural weight.
Paco & Lola is ideal as an aperitif served well chilled, and its acidity and salinity make it an excellent partner to a wide range of dishes. Try with oysters and other shellfish, ceviche, sushi and sashimi, grilled prawns, razor clams, light fish such as sea bass or sole, and simple salads dressed with citrus and olive oil. Paco y Lola
Paco y Lola is a modern, vibrant producer from the Rías Baixas DO in Galicia, best known for lively Albariño that pairs bright fruit with saline freshness. The project began in the early 21st century with the Seage family, who sought to combine careful viticulture in the Salnés subregion with a contemporary, design led brand aesthetic that would broaden appeal for Rías Baixas wines.
Ownership and leadership remain with the Seage family. Miguel Seage is closely associated with the technical direction and winemaking, working with a compact cellar team to translate vineyard quality into approachable wines that nevertheless reflect the region natural acidity and minerality. The family approach allows for agile vineyard decisions and a focused quality brief aimed at producing pure, fruit forward Albariño at scale.
Vineyards supplying Paco y Lola are concentrated in low lying sites near the estuaries of the Rías, where sandy and alluvial soils and cooling Atlantic breezes favour slow ripening and retention of fresh acidity. The estate sources fruit from selected growers and manages parcels to encourage healthy canopy balance and precise ripeness. Vineyard practice places emphasis on hand harvesting and gentle handling to preserve aromatic lift.
Winemaking is modern and precise. Grapes are pressed gently and fermentations are temperature controlled to protect primary aromas of stone fruit, citrus and white flowers. Short lees contact and careful racking lend texture without masking clarity. Some cuvees receive extended lees ageing to enhance mouthfeel, while others are bottled early to preserve crisp freshness. The technical team uses stainless steel and large neutral vessels primarily, reserving oak maturation for experimental or limited release bottlings.
