Xavier Vignon's 'Extra' range is celebrated for his creative pursuit of terroir purity, particularly through his own innovative "Vinarium" ageing process. This extraordinary 7,000-litre vessel, inspired by underwater techniques, submerges barrels within wine to maintain total humidity and zero oxygen.
This Côtes-du-Rhône blanc, a blend of Roussanne, Viognier, Clairette, and Grenache Blanc, undergoes an extended second fermentation followed by twenty-four months of maturation in this unique environment. The result is a wine of profound aromatic depth and incredible freshness, revealing notes of white peach, honeysuckle, and crushed stone.
On the palate, it displays a remarkably textured, pure profile with vibrant acidity. The finish is long and elegant, showcasing Vignon’s masterful, boundary-pushing craftsmanship.
